Cooking with Cannabutter: Caramel Apple Cider Cookies
As fall rolls in and the colors around us start to change and become warmer, we also start to crave many of those holiday favorites. For many, fall means the time for seasonal recipes like pies, jams and butters featuring produce like pumpkins and apples. Especially with Halloween nearing, many of our childhood memories of candied apples come to mind – so why not enjoy some cannabis infused Caramel Apple Cider Cookies?
The best part? You don’t need to wait hours for the cannabis to infused with the butter when you use Evergreen Organix Homemade Cannabutter!
Ingredients:
1 cup Evergreen Organix Homemade Cannabutter (softened)
1 cup granulated sugar
½ teaspoon salt
1 box spiced apple cider instant drink mix (10 - 0.74oz pouches)
2 eggs
1 teaspoon vanilla extract
1 teaspoon baking soda
½ teaspoon baking powder
1 teaspoon ground cinnamon
3 cups all-purpose flour
1 bag (14oz) individual caramel candies
Directions:
Preheat oven to 350 degrees
Place parchment paper on cookie sheets
In a bowl, thoroughly mix flour, baking soda, baking powder and cinnamon
Using an electric mixer beat together Evergreen Organix Homemade Cannabutter, sugar, salt and apple cider drink mix powder until light, fluffy and creamy
Mix in eggs and vanilla and beat well
Gradually add flower into mixture and blend well
Place mixture in the refrigerator for about an hour
Scoop cookie dough into balls roughly the size of a walnut
Flatten each ball of dough and push an unwrapped caramel candy into the center of the dough, and wrap the dough around it, covering the candy completely
Place each finished caramel covered dough ball on a parchment lined baking sheet, about 2 inches apart
Bake for 12-14 minutes until golden brown
Variations:
Likely, you aren’t going to want to vary this recipe too much – but if you aren’t a fan of caramel you can use flavored jellies, peanut butter or chocolate as a filling option.
Warnings:
If you feel like this dish may be too strong, or not strong enough, with the designated amount of cannabutter then feel free to adjust to your needs – and substitute with regular butter if you are reducing the amount being used.
